Recent refactoring has resulted in the following extension methods for IServiceProvider and IOrganizationService:

For both mocked services

.Data()
.Audit()
- (not yet implemented, but just for completeness)

Only for `IServiceProvider`

.Logs()
.Telemetry()

I want to return to the original design of the only being two extension methods, so abstract the above four out a level:

.Simulate()
.Simulated()
- .Data()
- .Logs()
- .Telemetry()
- .Audit()

Update the API, all unit tests (!) and documentation
