I play Mario Kart 64 alot and it works just fine (you have to map the analog stick to the gamepad and the z-button). Try different roms. There are many versions of mario kart 64 out there.
One other thing could be a messed up custom background. no video, just audio is exactly what happens when the border/background does not have transparency, but I highly doubt that this is the course here. btw: It's fun to play around with custom borders...
So good luck. Let me know if it helped.
EDIT: You could try this retroarch set:

I use it and it works just great! but beware: the "save states" with glupen64 are not working right now (gets hopefully fixed soon)
Hi hoderer, really thanks for your support, I never did anything about custom background, I will give a try to the set you indicated, I hope it will solve the issue! I dont care too much about saving, I choosed these 3 games for some couch playing with friends, no need to save any career, I will let you know if it solved the issue, thank you again for your kind reply!
Hi there, I am using the last release of Clover and Hakchi with good results:
But the big issue is Glupen64, I installed the core with all the others and it is recognized but I am not able to run the 3 only ROMs I would like to play (Mario Kart 64, Golf and Tennis) because as soon as I open them on the SNES Mini all that I got is a black screen with audio running but no video at all, I did nothing wrong and same is if I try to open the ROM from Retroarch on SNES, I looked a lot around, I have found a forum where they talk about this issue on PC and it was fixed with a procedure involving shaders, I tried but with no results at all, I see a lot of people running N64, we all use same hardware and core, I cant understand why on mine it gets to be like this...
Any help would be really appreciated, I would really like to run these games!
Thanks in advance
