Revise venv setup in the Docker image
Update eslint for the GUI
Update a few packages
Show stage status in the GUI

This PR is not yet ready to review the full HFT pipeline. It's mainly just looking at the organisation of the Dockerfile and the arrangement of venv for pip & poetry installs.
