This PR updates the default Postman collections saved in the tests folder:
Ethereum-Base: covers Ethereum, Uniswap, and Balancer
Uniswap-V3: covers tests related to Uniswap V3
Also, it reorganizes the Postman directory to collections and environments directories, and it separate collections so that there is a unique collection for each connector.
