As a coach, who is a big fan of this app (obviously) and would like to encourage my clients to use it, I can send the user a sign-up link which would take him to the sign-up page with the app already configured to be in collaboration with me. So that I can make it easier for the user to get started.
As in, the mentor, who is already familiar with the app from his other clients, and is the one introducing and recommending it to this user, can be the one to send the mentor-mentee connetion email.
