Update protected areas tutorial #11

This PR does a number of things, including:

Rather than requiring a download of the WDPA data, a sample from Feb 2021 is included.
Fix an error in the % protected calculations.
Simplify the re-projection and intersection code.
Rename a few variables for improved clarity.
Remove a couple of redundant maps.
Remove refs to protection targets in docs.
