standardize format and improve readability of OPTIONS documentation #36

Here are some proposed changes to the OPTIONS section of the documentation. The goal was to improve the consistency and clarity of the documentation.

I tried to limit the addition of new information but in a few cases it was impossible to add clarity without going into a little bit more detail. Please review to ensure I did not introduce any bad information.
