[BUG? 1.18.2-2.7.4] Cannot edit config files without them reverting to defaults (serverside)

When editing config files, they give a log of "Configuration file /home/container/config/Weather2/Misc.toml is invalid. Correcting" and then it resets them to default. This is the same for Sand.toml even though I haven't edited the file.

I've discussed this over on the Night Config repo and TheElectronWill said they could find no issue with the file specifically and to open an issue over here regarding the situation.

Update: After a few server restarts and updating to 2.7.4, it appears this issue is no longer happening.

Update: No matter what editor I use or encoding, the console gives me the following:
