Independence wars shouldn't be finished by occupying London

If they did take the capital, this would obviously result in an easy victory
Events to generate new troops, and boosted rebels so it's more like when the Netherlands declare independence.
Rebels should convert culture of occupied provinces. Provinces with culture of European nations should retain it post victory, and with the low stability (-3) from winning the war, Loyalist revolts should be far more likely.
Newly declared nations, once independent, immediately start a disaster akin to the peasants war. You should have to navigate a series of events, and it will only end once you have chosen a "direction" for your nation (i.e. monarchy vs. republic vs. theocracy (slim chance)), with the weighting (and the stability of your nation, and the ease of surviving the disaster) being changed by your actions, your defence of the nation, outside actors (powers (France gets event to fund e.g. ) and natives (event to declare war to take back land)) and your response to events (esp. events for natives within country)
Every decision has downsides, whatever you do is likely to annoy one group.
Colonial nations should feel a greater urge to go independent and go to war, towards the endgame.
