Original definition: x1 is the edible x2 portion of plant x3; x1 is a vegetable

Proposed definition: x1 is the edible x2 portion x3 of plant x4; x1 is a vegetable

No, I'm kidding, I actually propose: x1 is the edible portion of plant x2; x1 is a vegetable

The rationale is that it's totally unclear how the original x2 differs from the x1, so I think it should be simply dropped.
