Prepare Readme for Release 2.2.1

Purpose

Describe the problem or feature in addition to a link to the issues. The purpose of this PR is to update the README.md file for the upcoming 2.2.1, as well as to verify all pertinent information.

Approach

How does this change address the problem? This PR addresses the out of date readme by storing commits up until Development is ready to push to Master.

Ready for review and merge with current available information. "Current release" points to the v2.2.1 tag, so as long as that specific tag is used for the stable version, we're good.
