This is actually quite a good idea - it would be potentially beneficial to the organisation of the repository and its numerous issues and PRs, but @teamshortcut and @thebeanogamer would have to make and help decide on the categories, as too many would be potentially confusing.
Label suggestions would be a great addition, happy to discuss any suggestions for them. As to the specific example you gave, as we are not taking applications for Sudo at this time, and if we were Meta issues would not be the way to submit those, a "Sudo application" label is not one we will be adding. Other ideas welcome though.
I was merely giving an idea for when (if) #207 was implemented. Other ideas I can think of are for example "Issue", "Suggestion" etc
'For PR' - to be added when it is decided that this issue needs to go to a PR 'For Vote in #meta' etc

A description of the issue:
The use of GitHub labels could be beneficial to this repository - for example in the case of #207 a "sudo application" label could be introduced, allowing for discussion of whether a user is a good fit for sudo etc whilst allowing people to filter out these issues if they desire not to see them.
Proposed Solution:
Discuss, and potentially add, various labels to the github repository
