I would suggest reading this pdf, which shows much of the different binary formats used for Macs.
Then, go through Inside Macintosh in order, I guess. If you can't stomach all of it, scan the tables of contents for important-sounding things and check out only those.
After that is the old Apple technote archives, various development kits on the apple FTP archives, and probably all sorts of stuff I don't remember.
It's kind of ridiculous how much stuff you need to learn to program classic macOS.
