Stock aero's behaviour in stability differs quite a lot from IRL.
Seems center of drag play a key role here.

(display CenterOfDrag, stability analysis, etc.)
note that stability derivs does not mean very much in stock aero, as it's quite strict that:
if you're in something like 3~5deg AoA everything is fine, but once you're out of this range it's NOT fine.
