Add OpenTelemetry instrumentation to frontend and backend #15

We want to debug errors & performance issues, including correlating frontend and backend requests

Backend is (mostly?) done, frontend is gonna be pain (SvelteKit doesn't interoperate well with OpenTelemtry..)
