Migrate to use stars proxy objects for execution. #26

Most of the logic in intersectr could be switched over to use stars objects directly. A lot of functionality could be adopted from the use of stars proxy objects. Will require NetCDF stars proxy functionality though.

This issue has been overcome by events. Going to work intersectr in the direction of https://github.com/mikejohnson51/zonal and move parts of it into https://github.com/hypertidy/ncmeta/ -- hoping to dismantle intersectr in the interest of improving these workflows elsewhere.
