Adds documentation to Interops Module and updates main documentation #303

The interops module introduced some new configurations, which might not be trivial to understand. This Pull Requests adds documentation on those properties.

Further, we try to include some information on the internal workings and encodings used, to be compatible with the European Federation Gateway Service.

On the main README we updated the database tables to honour the changes to the model we made. We also fixed some minor issues, and removed the part about our custom Swagger-Generator, which is now available from maven central.
