Fix+update docker-compose.yml, Dockerfile and update instructions on README.md

Issues with container:

• Docker log in works but won't have access to image
• container runs but cannot access any of the jupyter notebook link generated
• docker pull does not work on everyone's devices

FIXED: issue was found with the image name in the docker-compose.yml file, updated and all should work now
