... and remove misleading ssh-kafka configuration, which doesn't actually use Kafka

So in the end, this PR:

removes the data/ folder in the root of this directory,
changes all the control ports of the process manager to be dynamically allocated,
creates an src/drunc/data/process-manager/ssh-pocket-kafka.json process manager configuration.
