This proceeded with a modification to the labels: Select the [lakes] layer. In the Layer Styling panel, click the Labels button. Adjust the settings as desired [select Fill color: Red].
Change Fill color: white.
Further navigation was performed looking at the range of options in the software.

This allowed me to add a landcover map of Alaska. I then loaded a lakes map. We changed the fill colour of the lakes layer to blue, added labels and a border around the text labels. Reading on I discovered that the QGIS project file, when saved is an xml file format. Opening Sublime Text, I found the qgs file is editable.
