Possible solutions
Improve the uploader image controller.
Making the field optional would require many changes in the code base (any ->getPhoto() should be surrounded by if statements, any .photo in twig should too, and the storage_url filter should accept nullable strings)
Leaving it mandatory, but setting photo to a default value (similar to what Gravatar does) feels like a good solution as well. We can't set it on the object storage though (can't be positive the image always exists), which means it has to go in the public folder, hence requiring modification of the storage_url filter.
