[docs] Update documentation that is out of date

What does this PR do?

Updates some of the documentation that ends up on https://datadogpy.readthedocs.io/en/latest/

Description of the Change

Looks like we haven't updated the docs that end up at the site https://datadogpy.readthedocs.io/en/latest/. This PR ensures that at least some of the information is now up to date, including the special caveats about the new datadog.dogstatsd behavior.
