RUM-5782 [SR] Add new config fields to telemetry

What and why?

As part of the FGM initiative, we are adding new privacy levels to Session Replay (see RFC).

This PR introduces the fields textAndInputPrivacyLevel, imagePrivacyLevel, and touchPrivacyLevel to be sent to our configuration telemetry dashboard.

How?

• Added these additional fields to be sent to telemetry when enabling Session Replay
• Updated tests accordingly
• The local models have already been modified (see RUM event schema update here)
