[PRODUCTSA-1093] Update OPW chart for v2 release #1380

This is a squashed version of https://github.com/DataDog/helm-charts/pull/1329 with a signed commit to allow merging.

Remove remoteConfigurationEnabled and pipelineConfig values: OPW2.0 is RC only
- Bump version and appVersion to 2.0.0
