Update paths to be compatible with new brew prefix on ARM-based Mac #89

On ARM-based Mac (e.g. M1 MBP), the homebrew path has been changed from /usr/local/bin to /opt/homebrew/bin This is creating issues for scripts hardcoding the old paths

This PR is asking brew for its path before setting up the configuration, therefore preventing hardcoding the wrong path for ARM laptops
