I did a little poking around, and I agree that application/gpx+xml
is the right MIME type.
I did not find it registered at IANA, but it is configured in Firefox, and Wikipedia lists it as the correct media type. I read through the mailing list archives, and they reached consensus on the media type, but it seems like nobody registered it.

Considerations
I think
application/gpx+xml
is correct but it could be consideredapplication/xml
more broadly if that specific MIME type won't work.
