Thanks @jvanulde . The jekyll docs say that you can use plugins: as the key name for any version of jekyll, and gems: for >3.5.0 : https://jekyllrb.com/docs/plugins/installation/

I'll update the docs to include this change so it works for more people out of the box. Thanks.
