190 readme and dev deps improvements

Fixes #190

Explanation

Some updates that provide the user with more information, make the package future proof. Details in the linked issue. I also removed the yml files (and updated the workflow files and documentation, to make sure we have a single source of truth for dependencies (pyproject.toml)
