review the default regridding methods for metaswap package arrays #1002

Regridding has been implemented for (some) metaswap packages, but the default regridding method for now was set to overlap/mean for now. we should decide for each array what the most suitable default regridding method would be. This goes for all the metaswap packages and all their arrays.
