I know that the torch install is a windows thing, and it's separate to the space engineers install, which makes me assume that it's not possible to have them running through docker installs...
But I figured I would ask the question, as it seems running torch is a huge improvement on the SE server backend (especially with some of the better torch plugins).
My alternative would be running SE in a windows virtual machine. But that would have a lot of overhead (it's an unraid server) such as restricting cores and memory just for vm use. Figured I could ask the question and hope someone had a clever solution!
