Probably not - I'd like to keep this project focused on the McDonald's series which I considered to be the most interesting.

In the case of bigger scale LCD games, this'd probably be a better job for the MAME folks to do actual emulation on.

Would you consider expanding the app to include non-Sonic LCD games also from McDonalds like Crash and Spyro or the recently released Tetris McNugget?

No, but there's nothing stopping an aspiring fan from using the codebase to tackle those. 🙂
