Document how how we use vocabularies and the different field types we support in MMs #191

Is your feature request related to a problem? Please describe. There are many types of fields and ways using vocabularies in MykoMaps and it can be quite confusing. We need a document in the github repository to give an overview of this.

Describe the solution you'd like A human readable document that explains all the different types of vocabularies we use in MMs, where the are used and the different types of fields that use those vocabularies.

It should include a nice glossary of terms.
