Update images folders to use files directory in reading and exercises #1059

The livebook 0.11.0 version changed how images are read into the livemd files.

There is a script provided, it swapped out the names in each livemd file from (images/\<image>) to (files/\<image>), added the necessary json content to the header, and moved all images to a files directory.

Thank you for the fix! I pulled and confirmed images were present :)
