Update Pixlet and Airflow #18

This pull request includes the following changes:

Upgraded Pixlet to version 0.28.7
Updated Airflow to version 2.8.1 to resolve dependency conflict. Fixes https://github.com/DouweM/pixbyt/issues/16.

@bboatwright Would you mind testing if main works for you now that this has been merged (as you were looking into this right now anyway)?
