Branch refactoring - the name neo4j-5.1.x-dev is confusing #16

The name neo4j-5.1.x-dev is confusing as it seems to indicate the branch is based on only neo4j 5.1 versions only.

It should be neo4j-5.x-dozerdb-1.x or something along those lines.

We will discuss this during the next team meeting.

We decided to keep the current version naming convention as it was the only simple way to keep the semantic versioning information for both Neo4j and the DozerDB plugin within the a single version name. If anyone has any recommendations, please let us know.
