Fixed for 1.20! Bug didn't seem to carry into 1.18 :) Fixes will be out next update (1.7)!
(I will keep this thread open, if you'd like, so it can be updated with new bugs of similar issues)
First of all, no problem. Second of all, thank you very much. I didn't want to have to keep opening up issues for what would essentially be just the same bug, but a different flavor. In fact, now that I have a moment, I'm going to go test right now. I think only the walnut sapling was affected, but so you can close this thread, I'm going to see if I can find anything else like this bug.

Okay, testing with Forge 1.20.1 with the most updated version available on Modrinth. Walnut, banana, passion fruit, dragon fruit, olives, almond, and cashew saplings all grow into orange trees. The rest all grow into their proper trees.

No problem! And no sweat! Even professional programmers overlook stuff like that and it often takes a customer reporting an issue for it to be noticed. I work as a software developer so I have first hand experience with that.
Walnut saplings grow into orange trees, just as the title says. If you would prefer, I can update this issue with issues of a similar nature.
