[UX] Change default state for foldouts. #9

colorsFoldout and iconsFoldout = true. Saves a click, the options-menu is not big enough to warrant fully collapsed settings, IMO. Sub-foldouts for colors can stay collapsed for readability's sake.

I took this opportunity to change up the GUI for the settings window as I never liked it aesthetically. Tell me what you think and if it looks good then I'll push it to the PR and then merge 👍
