Update GitHub actions to latest versions and clean up the docs around the newly hosted images #16

Felt bad about all the actions needing an immediate update, so wanted to clean that up here.

I also fixed the docs around not using upper case characters in the GitHub container registry URL.

I figure something like this should be tag v2.1.1 because it's not really changing any source code.

Let me know what you think!

Also, if we merge this, then the other dependabot created PRs will automatically close themselves within 24 hours, so not much clean up needed.
