Clean up `plot_horiz_field()` #143

This merge includes a few pieces of clean-up for plot_horiz_field() that came up while porting the ISOMIP+ initial condition.

@cbegeman, I haven't had a chance to test this carefully except in my ISOMIP+ work so you can hold off on reviewing until I do. For now, I just wanted to peel this off into its own branch and PR to keep things smaller and more focused.

Testing

I tested this on Chrysalis with all planar cases other than the RPE tests. I ran the viz steps of the manufactured solutions and inertial gravity wave tests, since they don't run by default.

The resulting images all looked reasonable to me.
