Standardize styling for all references to Omega #210

In this PR I found instances in the documentation where Omega was stylized as "OMEGA" and updated it to the current standardized styling ("Omega") where appropriate. In addition to the documentation, I also updated a handful of comments in code files.

I have not run any tests (not sure if that would be necessary since it's all just documentation/comments), but I did build the documentation locally and it looked correct as far as I could tell.
