Closes #12 (a poorly titled ticket as nothing is truly final in this world)

This is mostly the beginnings of some actual documentation which you can read more easily here, plus minor changes to output that OT requested a while back.

@M-casado @tcezard Sorry for yet another PR, I realised I wanted to send the schema and example data to OT before our next meeting and there were still a couple changes to make... No rush on this.
