Adding a GitHub workflow with parametrized environment variable

I've cloned and modified the deployment workflow which now uses environment as an input variable.

Could you have a quick check please, @sebsteinig?

I'm still finding my way around GitHub action.

I've realised too late that in order to be able to run a workflow manually, it needs to be in the default branch:
