This PR changes the phrase "processing function" to "conversion script" in the Create vignette.

The language "conversion script" is used in the MOB paper as well as the shared practices.

Don't worry about the requested changes @kzollove. I've learned how to merge your PR into the lang_align branch and will make changes there. Once that branch is merged into development, this PR will be closed.
