document use of EESSI as backend in Ramble #246

EESSI supported as a backend in Ramble, see https://github.com/GoogleCloudPlatform/ramble/pull/551

Ideally we can add some brief info on that in the EESSI docs, and point to the Ramble documentation for more info (currently EESSI is not mentioned yet there, cc @douglasjacobsen)
