Create/adjust documentation for new client packages #77

Explain how to use the new client package, e.g. the CVMFS_CLIENT_PROFILE parameter (see. https://cvmfs.readthedocs.io/en/stable/cpt-quickstart.html#create-default-local).

We should also update the node image build script in CitC which just got merged, see https://github.com/clusterinthecloud/ansible/pull/94.

Should we also keep a list of places where the config packages need to be updated, so we don't overlook something in the future?

That could indeed be useful. PR #79 will hopefully make this a bit easier, though we still need to, for instance, rebuild container images (manually, at the moment... we should fix that too).
