Also reverts docs back to sphinx-book-theme (partial reversion of https://github.com/ESA-VirES/VirES-Python-Client/pull/80) - the problem I saw earlier was maybe just a browser caching issue. This new theme should make it unify better with the Jupyter Book usage (it's the same theme). The only issue I found so far was the awkward formatting of the AEBS collection tables in available_parameters.rst
