Clean up structure of files in project #9

[x] Move code files to a src/electricity/ folder
[x] Move notebooks to a separate notebooks/ folder
[x] Update imports
[x] Verify pip install [-e] . works

Consider using the cookiecutter template either to paste the project into, or as inspiration for what we still want to add.

This is best done after #3 when all data file references are already updated

Having looked at the cookiecutter template, it mainly provides new files on top of what we already have. Incorporating these new files is better suited as a separate issue (#12)
