Update the release schedule for v2.11.0 #3572

Now that the release for v2.11.0 has been scheduled (see https://github.com/ESMValGroup/ESMValCore/discussions/2389 and https://github.com/ESMValGroup/ESMValTool/discussions/3565), the release schedule in the documentation must be updated.
