Fix automated documentation generation that failed for 2.1.1 with the next release.

[ ] fix documentation generation action (https://github.com/ETHZ-TEC/RocketLogger/actions/runs/5562285801)
[ ] add regular CI for generating documentation to test upfront

(for release 2.1.1 the required docs were generated and deployed manually)
