Review the data models for sanity #85

Make sure the data model makes sense, is sound, and reflects all decisions and assumptions involved with our current understanding of the solution.

In particular, double check that Field Values are not being stored for "special" or "event" fields. For now we've decided to retain those fields in the datasheets.

Also review if field category should be on the DSF as it is, or on the field.
